    Pumpkin Cupcakes with Chocolate Cream Cheese Frosting & Crumb Topping

    This recipe is very moist packed with lots of flavor and texture! Very refreshing dessert!

    • Cupcake Recipe:
    • 2 C Sugar
    • 1 C Vegetable oil
    • 1 tsp. vanilla extract
    • 2 C Canned Pumpkin
    • 4 eggs
    • 2 C Flour
    • 3 tsp. baking powder
    • 1 tsp. American Heritage® Chocolate Drink mix
    • 2 tsp. baking soda
    • 2 tsp. cinnamon
    • 1/4 tsp. salt
    • Chocolate Cream Cheese Frosting:
    • 8 oz. cream cheese
    • 1/2 stick butter (room temperature)
    • 1/2 C American Heritage® Drink Mix
    • 3 C 10 x Sugar
    • Graham cracker crumb topping
    • Crushed graham crackers
    • 2 tsp. American Heritage® drink mix
    Step 1

    Preheat oven to 350 degrees

    Step 2

    Blend flour, baking powder, baking soda, salt, cinnamon, drink mix (set aside)

    Step 3

    In another bowl combine sugar, oil, vanilla and pumpkin (beat together) beat in eggs

    Step 4

    Gradually beat in flour

    Step 5

    Scoop batter into cupcake liners and bake at 350 degrees for approx.20- 30 minutes(ovens may vary) until toothpick inserted into the center of cake comes out clean.
    Allow to cool!

    Step 6

    You can just ice the cupcakes or you can fill center of the cupcakes with frosting too.
    You can also add more drink mix to the frosting to your liking.
    Top with the graham cracker crumb topping
    Another option would be to add 1/2 C peanut butter to the frosting recipe for a chocolate peanut butter flavor
