The Confectioners Mill Preservation Society

The Confectioners Mill Preservation Society is a non profit 501(C)(3) corporation established for the research and preservation of Colonial and Federal period chocolate mills and chocolate houses in the Americas. (A chocolate mill during the Colonial and Federal American period was a stone, brick or wood structure, usually water or animal driven used to process cacao “nuts” or beans for the reason of making chocolate. The operation of the mill consisted of roasting, winnowing and grinding the raw cocoa beans into a finished or semi-finished chocolate paste. The chocolate paste, which sometimes included spices and sugar, was then sold commercially in shops or to individuals for the purpose of baking or drink making).

Our vision is to research, protect and restore significant 17th – 19th Century chocolate mill sites and chocolate houses in the Americas, to develop and provide interpretive chocolate programs designed to progress the collective research of both the Confectioners Mill Society and the findings of the Colonial Chocolate Society.
