Title: American Heritage Chocolate.

The vision, concept and design of American Heritage Chocolate came from the passion of a group of colleagues, whose interest crossed the lines of historic Foodways and early chocolate use and manufacturer during the 18th & 19th Century in the Americas. From pre-Columbian use on through to present, chocolate intersects many cultural and period evolutions of formats, flavor and uses. This chapter outlines this group of researchers' "walk through history" in discovering historic recipes, manufacturing techniques and processes and trying to re-create these recipes in a modem, yet historically accurate context. Specifically, this paper describes 1) 18th & 19th Century recipes, packaging and end-uses; 2) Product design format (rolls, sticks, blocks, etc.); 3) Scaling a 18th century product & process into a modem design and process; 4) Product introduction and marketing.
