    Making pudding from scratch can be time consuming but this microwave technique is a snap and so worth the extra effort! Just remember that all microwaves are different, so the times listed are suggested.

    Yield: 2/3 cup vanilla pudding, 2/3 chocolate pudding, 2/3 strawberry pudding enough for 6 small pops or 4 larger ones
    Active time: 30 minutes
    Additional time: Chill time 4 hours, Freeze time 12 hours.

    Step 1

    In a microwave bowl, heat the milk in the microwave on high for 3 minutes until hot, not boiling.

    Step 2

    In a separate bowl, whisk sugar, cornstarch and salt together.

    Step 3

    Whisk sugar mixture into heated milk slowly.

    Step 4

    Cook in microwave on high for 4 minutes, stirring with a whisk halfway through cooking time. The mixture will be thickened and puffy. If it is not, return to microwave and cook for another minute.

    Step 5

    Divide the hot mixture in half. Whisk the egg into half of the hot mixture. Then slowly whisk the egg mixture into the other half of hot mixture.

    Step 6

    Divide the pudding mixture into thirds, about 2/3 cup each.
