He is the resident Chocolate Historian at Mars Wrigley! As a historian he is always on the lookout for new facts surrounding the history of chocolate.
Dave works with historic sites (such as Mount Vernon, Monticello), academics and researchers to discover little-known facts about chocolate. He also hosts lectures and virtual events about the history of chocolate.
The cocoa tree was first domesticated (or had its behavior, life cycle or appearance significantly altered by humans) at least 3500 years ago in the rain forests of Central and South America. Chocolate became an integral part of Olmec, Maya, and Aztec cultures and played an important religious, medicinal and economic role in their societies
The first reference to chocolate in North America is from the Spanish ship Nuestra Senora del Rosario del Carmen, which arrived in St. Augustine, Florida with crates of chocolate in 1641.
The earliest known recipes appear to be from the Maya(n) Civilization in 250-600 AD. They mixed ground cocoa with water and maize (corn) along with vanilla, rep pepper, and sometimes, dried flowers.
Dave is a true history buff and is currently reading The Smugglers’ World: Illicit Tade and Atlantic Communities in Eighteenth-Century Venezuela by Jesse Cromwell. The book traces the movement of commodities and goods in the Carribbean, one of the most sought after was cocoa.
When he’s not eating AMERICANHERITAGE Chocolate, Dave enjoys anything created by ETHEL M Chocolates. They combine their delicious signature chocolate with some of the most fantastic centers in their truffles, like raspberry crème, lemon crème, and caramel.
